Baked brie and cheese boards

Baked brie recipes and cheese board formulas, with exact amounts per guest.

Cheese Boards and Baked Brie

A good cheese board is a formula, and a good baked brie is three decisions. Get those right and you can host for two people or twelve without guessing at the store. This guide pulls together the numbers behind every board and baked brie recipe on the site, so you can shop once and build with confidence.

The formula behind every board

Most boards here follow the same shape: 3 cheese, 2 meat, 2 crunch, 1 fresh. Three cheeses, two cured meats, two crunchy things (crackers plus nuts) and one fresh item such as grapes, apple or berries. Sweet spoonables like honey or jam sit in small bowls on the side.

It works because each part fixes a problem in another part. Meat and cheese are rich, so the fresh fruit or vegetable cuts through them. Crackers carry the soft cheese. Nuts add a second texture. A sweet spoonful makes a salty cheese taste rounder.

When one cheese comes out of the oven, the formula shifts to 1 warm, 2 firm, 2 crunch, 1 fresh. The Fall Harvest Board is built this way: a warm baked brie in the middle, aged gouda and blue at opposite edges.

Then there is the filling rule. Build from the center out and fill every gap until no wood shows. A packed board looks planned. Bare wood is what reads as improvised. The one exception is a small round for two, where a little wood at the rim is correct.

How much cheese per guest

Use two numbers and ignore the rest. As an appetizer, count 70 g (2.5 oz) of cheese per guest. When the board is the meal, count 150 g (5.3 oz) per guest.

The meal boards in our collection are sized that way: the Date Night Board for Two replaces dinner, and so does the Brunch Board. Party boards are lighter per person, because people graze and also eat other food.

A few size anchors from the book: the Girls Night Board feeds 6, the Game Day Board feeds 8, and the Holiday Showstopper Board feeds 12 with two baked brie wheels. Two small wheels beat one big one because everyone reaches a melted center without a queue.

How to choose and buy brie

Brie is the anchor of almost every board, so buy it with care.

  • Wheel size. A 225 g (8 oz) wheel, about 5 in across, is the standard baking size and serves 6 as an appetizer. A 1 kg (2.2 lb) wheel serves 20.
  • Double or triple cream. Double cream is around 60 percent butterfat and holds its shape when melted. Triple cream is richer and runnier, better spooned than sliced. Both bake.
  • Buy it whole. Pre-cut wedges dry out at the cut faces and leak in the oven. Buy the whole wheel, even for a small board.
  • Keep the rind on. It is edible, and it holds the melted cheese in. Never trim it off before baking.
  • Take it out early. Pull the wheel from the fridge one hour before guests arrive. Cold brie tastes chalky and holds its aroma back.

The three decisions of baked brie

Every baked brie recipe on this site comes down to the same three choices.

1. The wheel. Use the 225 g (8 oz) wheel unless you are feeding a crowd. Score only the top rind in a crosshatch of 1 in (2.5 cm) squares, about 3 mm deep, just until the paler paste shows. Scoring gives honey, jam or oil somewhere to go.

2. The oven. Without pastry, bake at 350 F (175 C) in a small dish that holds the wheel snugly, so the sides cannot spread. A 225 g wheel takes 12 to 15 minutes. A 1 kg wheel needs 30 to 35 minutes at the same temperature. With pastry, the oven goes up to 400 F (205 C), and the wheel goes in cold.

3. How to tell it is done. Do not trust the timer alone. Press the center with one finger. It should give like a water balloon, and the scored top should have parted. If it firms up on the table, warm the dish 3 minutes at 350 F until it loosens again.

With puff pastry or without

Without pastry is the fast route: easy, around 15 minutes of oven time, and the topping is the star. Honey Walnut Baked Brie is the simplest example. Toast the walnuts first and they stay crunchy under the honey.

Pastry takes more work and rewards you with a showpiece. The Classic Baked Brie in Puff Pastry bakes 25 to 30 minutes at 400 F, until the pastry is deep golden and sounds hollow when tapped. Wait until the oven light clicks off before the wheel goes in, because pastry that starts in a cool oven slumps instead of rising. Then rest it 10 minutes, until the bubbling at the seams goes quiet. Cut sooner and the center runs off the plate.

A pastry-wrapped wheel can be assembled ahead and refrigerated up to 24 hours. Bake it from cold and add 5 minutes.

What to serve alongside

Brie likes honey or fig jam, water crackers, green apple, and apple butter. Pour dry sparkling wine or Champagne, or sparkling apple cider if you are not drinking alcohol.

For the rest of the board, a few quick matches help. Aged cheddar pairs with dark honey and crisp apple, and the white crystals in it are a sign of age, not a fault. Blue cheese needs sugar next to it: honeycomb or fig jam turns sharp into rich. Fresh mozzarella comes in water, so drain it 10 minutes or it will flood everything near it. Havarti is the safe cheese for guests who say they are picky.

If you want ideas for the topping itself, try Cranberry Pecan Baked Brie for the holidays or the Garlic Herb version when you want something savory.

Common mistakes

  • Cold cheese. Serving straight from the fridge flattens the flavor. Give every cheese its hour.
  • Cutting off the rind. The melt then runs everywhere.
  • Dried fruit on raw brie. It turns to leather by the time the cheese melts. Soak it in juice first, as the cranberry recipe does.
  • Cutting a pastry brie too soon. Rest it the full 10 minutes.
  • Apples browning. Slices brown in about 20 minutes. Toss them in lemon juice and they hold for two hours.
  • Not pre-cutting. Cut the first wedges so the first guest is not the one who breaks the rind.

Hosting on a budget

You do not need pricey cheese to make a board look generous. The Budget Board Under $25 feeds 6 with a store-brand brie, a sharp cheddar block and a colby jack block, plus salami, deli turkey, butter crackers, peanuts, raisins and apples.

The trick is to buy blocks and cut them thick. Thick batons stacked in tight piles look full, and pre-sliced cheese is where the money goes. If you skip the meat, roasted chickpeas cost about a dollar and fill the same gap.

When the doorbell has already rung, the Ten Minute Emergency Board feeds 4 with what is in the fridge: brie, cheddar, cream cheese with pepper jelly poured over it, salami, any crackers that are open and an apple.

Where to start

Six articles cover the whole system. Read them in this order.

  2. Honey Walnut Baked Brie for the fastest bake.
  3. Cranberry Pecan Baked Brie for a holiday topping.
  4. Girls Night Board for a standard party board.
  5. Budget Board Under $25 for hosting on a small budget.
  6. Ten Minute Emergency Board for the unplanned guest.
