Harvest guide

Zucchini and preserving

Zucchini recipes, small-batch jam and refrigerator pickles for the harvest you cannot finish.

Garden, Zucchini and Preserving

Zucchini is 94 percent water, which is why a bad zucchini loaf has a raw stripe down the middle and a bad casserole is soup with cheese on top. Every recipe in this guide solves the same problem: get the water out before it ruins the dish, then match the method to what you are making. Learn that once and a pile of zucchini stops being a problem.

The numbers worth remembering

One medium zucchini weighs about 200 g whole. Shredded and squeezed, it gives about 1 cup, or 120 g. So when a recipe asks for 2 cups of squeezed shreds (240 g), that is two medium zucchini. Four cups (480 g) is four.

Keep that conversion handy and you can buy, shred and portion without a scale.

How to prep zucchini so nothing turns watery

The method is short: shred, salt if the recipe says so, wait, squeeze.

  1. Shred on the large holes of a box grater. The fritter and bread recipes both start this way.
  2. Salt and wait when browning matters. For fritters, 1 teaspoon of salt on the shreds and 10 minutes in a colander brings water beading out. For sliced zucchini in a casserole, salt and drain 15 minutes, then press between two clean towels.
  3. Squeeze in a clean kitchen towel. Pile the shreds in the center, twist the towel closed, and squeeze over the sink.
  4. Squeeze again for fried recipes. Open the towel, refold, and squeeze a second time. Fritters want dry, fluffy shreds.

What "squeezed" looks like

Use the sink as your test. Squeeze until the drips stop, or until the stream stops. The shreds should look fluffy, not packed and glossy. For Zucchini Tots, press a spoonful in your hand: it should hold its shape. If it crumbles, the mix needs a little more panko.

Squeezed shreds carry about half the water of loose ones, which is the reason a squeezed loaf bakes through. For sliced zucchini, the towels should come away damp, not soaked.

Which method for which recipe

Breads, cakes and sweets

Sweet recipes use squeezed shreds so the batter gets moisture without a flood. Classic Zucchini Bread uses 2 cups of squeezed shreds. The double chocolate loaf, Cinnamon Zucchini Muffins, the cookies, the brownies and the lemon cake follow the same logic.

Two small rules. Chill the cookie dough, because extra moisture plus warm butter turns cookies into puddles. Glaze the lemon cake only when it is barely warm: on a hot cake the glaze soaks in and disappears.

Savory dishes

Savory recipes fall into three groups, and each handles water differently.

  • Shred, salt and fry. Crispy Zucchini Fritters need dry shreds, because wet ones drop the pan temperature and steam instead of browning.
  • Slice, salt and press. The cheesy casserole pulls about a third of the water out of the slices before it is assembled. The gratin gets its crumb lid halfway through baking so it does not turn to paste.
  • Cook hot, in one layer. Ten Minute Garlic Zucchini browns because the water leaves as steam in a single layer at high heat. Crowd the pan and the rounds simmer to gray. Garlic butter noodles cook in about 90 seconds, and anything longer turns them watery.

Other savory dishes skip the squeeze and deal with water another way. Taco boats get a parbake that drives off water before filling. Lasagna roll-ups roast the planks first. Sheet pan ratatouille uses dry metal so the sugars brown.

Hidden-veggie dishes for picky eaters

These are built so the vegetable disappears. Hidden Veggie Marinara blends the zucchini before the final simmer, which breaks it into particles small enough to read as sauce and boils off the water it released. Sneaky Mac and Cheese melts the cheese off the heat, which keeps the sauce smooth and hides the vegetable. Banana pancakes, cheese quesadillas, tots and a chocolate smoothie round out the group.

Snacks

For after school or game night, try Baked Zucchini Fries, Zucchini Pizza Bites and Parmesan Roasted Rounds. The first bake on the pizza bites drives water out of the rounds, and skipping it means the sauce slides off. Pizza bites and fries reheat in a 400 F (205 C) oven, never the microwave. The parmesan rounds do not hold, so roast them while dinner rests.

How to freeze

Freezing advice here comes from the finished dishes, and each one has its own limits. The sources do not cover freezing raw shreds, so this guide does not either.

  • Loaves and muffins. Classic Zucchini Bread keeps 3 days wrapped at room temperature, 1 week in the fridge and 3 months in the freezer. Freeze it in slices with parchment between them and toast straight from frozen. Muffins freeze 3 months too.
  • Cookies. Freeze scooped mounds 3 months and bake from frozen, adding 2 minutes.
  • Brownies and lemon cake. Freeze cut brownie squares in a single layer first, then bag them, for 3 months. Freeze lemon cake unglazed, 3 months, and glaze after thawing.
  • Marinara. Fridge 5 days, freezer 4 months. Freeze flat in 480 g (2 cup) bags, one pasta night each.
  • Soup. Freezer 3 months. Freeze before adding cream and stir the cream in when you reheat.
  • Fritters and tots. Fritters freeze 2 months and tots 3 months.
  • Smoothie chunks. Cut a medium zucchini into 1/2 inch (12 mm) chunks, spread them on a tray so none touch, and freeze at least 4 hours. Bag once solid. They keep up to 6 months.

Two dishes do not freeze well: the cheesy casserole, because the slices go grainy, and the parmesan gratin.

The refrigerator relish, and why it stays in the fridge

Zucchini Refrigerator Relish turns 4 medium zucchini into 3 cups. It needs no canner, no processing and no sealing. It keeps 2 months in a sealed jar in the refrigerator, and it tastes better after 3 days than on day one.

The recipe salts the chopped vegetables for 2 hours with 1 tablespoon of salt, then rinses and squeezes them dry. That step decides whether the relish is bright or watery. After that, it simmers 12 minutes in vinegar and sugar until the liquid coats a spoon.

It is not shelf stable. It lives in the refrigerator.

This guide does not cover water-bath canning or shelf-stable jars. If you want that, use a source built for it. Everything here is for the refrigerator or freezer.

Where to start

These six articles cover the core skills, from squeezing to storing.

  1. Classic Zucchini Bread for the squeeze method and a loaf that bakes through.
  2. Crispy Zucchini Fritters for salting and drying.
  3. Hidden Veggie Marinara for the sauce that freezes flat.
  4. Zucchini Refrigerator Relish for a jar that lives in the fridge.
  5. Ten Minute Garlic Zucchini for the fastest weeknight side.
  6. Zucchini Tots for a snack kids eat.
